I am setting up GrandNode on Digital Ocean and am trying to organize tour selling e-commerce site,
For example, the tour is a multi-day tour and last 7 days from 7/27/2019 to 8/3/2019 and there are 12 available spots on the tour. When a customer reserves the tour it is going to be for all seven days.  Customer can buy any number of the spots on the tour (1 to 12 spots). Each spot cost $1000.

How do I set up the product in order to accommodate this case?

It requires a little customization. First of all you should limit the date picker. Because the trip starts from i.e Monday, so users should not be able to reserve another days of week. Then each trip should be a independent product. Of course it's possible to extend the reservation functionality, but it should be done with a plugin.
