I want "gender" option not to appear on the "Configuration / Customer settings / Customer form fields" screen on the admin screen. I am saving as not selected. But when it comes back to the screen, it comes back to be selected. What am I missing?

I suppose it's working fine. Maybe something has been cached. Can you try to Clear memory cache? It's in the top right corner, under the "Cog" icon.
