When I test with the web test environment recommended by google, the performance results are always bad.

Demo doesn't contain the newest changes that will come with the 1.1.0 release, so yes, due to vue.js implementation, you may face some bad results on web.dev tests even if store works fast and efficient.

Is the new version managed by webpack? Is Nodejs installation required? What commands are used to build the frontend?

You don't need NodeJs. Everything will be clear after the latest stable version release. It may happen before the end of the week.
